There's nothing nice to eat!

So I have never made any secret of the fact that I generally cut corners where possible when cooking! But when you hear the phrase "Muuuuuuuuuuuuuuuuuuuuuum! There's nothing nice to eat...." being howled from the pantry, you'd best be onto making your mini me something 'nice', or otherwise buy earplugs, because you know there's going to be moaning and groaning for the rest of the afternoon. I had no cake mix in the cupboard (gasp!), so I made these. And they're scrummy and relatively easy, and child friendly too!

11/4 cups plain flour, sifted
1/2 teaspoon baking powder
3/4 cup of caster sugar
125gm butter, melted
2 eggs
3/4 cup milk
1/2 teaspoon vanilla essence

Line patty cake tins with cases. Preheat oven to 160. Mix the flour, baking powder, sugar, butter, eggs, milk and essence into a large bowl and mix thoroughly. Using a dessert spoon, spoon mixture into cases so they are half full.
Bake for 15 minutes. Turn out from tins and let cool.

royal icing
1 x 330 gm bag royal icing
50 ml water
11/2 teaspoon extra water

Don't start making the icing until the cakes have completely cooled! Mix the icing mixture and 50ml water until there are no lumps of undissolved sugar. Set aside 1/4 of the mixture. Add the extra water to the rest of the mixture and colour as desired. Spoon onto the cakes, make sure the icing floods the sides of the cases. You can use a small spoon to push the icing into the folds of the cases. Use the white icing to pipe small stripes on top.

note to self for next baking adventure:
  • Use less colouring next time if you wish to have a 'soft, pretty colour'...
  • A zip lock bag does not substitute for a piping bag, even if you put the nozzle in it. It will just spilt and explode, and then your nice little lines become big fat snakes while you panic to get them on.
  • Royal icing sets as soon as its made. Don't make it, and then expect it to wait patiently as the cakes cool. Royal icing doesn't roll like that girlfriend.
